I have been reading these forums for 2-years. Always great info and advice. I have been working the little guy for almost 3-years and love it. First contribution. Happy to share process/recipes. These turn out so good. I slice And vacuum seal the leftovers in proportions. Boil in bag for 10 min. Just like steaming. Enjoy!

Thanks guys! I swear these taste better out of the freezer. Defrost in fridge. Boil in bag. Cut open and serve. Now that’s my idea of Lazy Q!

 That looked geat.. Customers used to take us to a bar in Pittsburgh that made these sandwiches (Kretzlers).. Always a treat when we were in town.. Always like St Patty's just for the fact you can get corn beef at a decent price to make pastrami..

Thanks Kona! We always stop at Primanti Brothers every time we are in the area. You are right about St. Patrick’s. Our Local Aldi has corned beef for $.99 or $1.99 lb.. but go to Wegmans they want $6.99 lb.

Next, I am going to try a week long brine. I’ve heard once you brine your own, you never go back. We will see.
