Once upon a time, they had duck hind-quarters on sale and I bought several pounds and confitted them, I had to use some lard as I didn’t have enough duck fat to start with. But that stuff was amazing on anything, and the duck/lard made potatoes that were indescribable. The confit was delicious on homemade pizza, too.
I’ll have to stop by the local Wal-mart.
