Texas in the house!

Hello everyone!

I just wanted to say, we can't wait to start the first batch!  After much research and convincing of the Wife  ;) our Model #2 is now in our possession.

She's just finishing up the "seasoning" with a couple of the hickory cylinders and some pecan pellets (we bought the chip/pellet tray).  Ribs are thawing in the sink and the brisket is ready to go too -- wish me luck!

Glad to see another Texan here, Alpha ... greeting from Houston.  Good luck with your new smoker ... these things are a lifesaver considering how hot Texas summers get.

Es1025, it's a shame you didn't have the smoker for the holiday weekend ... I've got four full racks of St. Louis spares and an 8lb pork butt in there right now for a some friends coming over tonight.  Three more hours and they'll all be ready (assuming the butt doesn't plateau for too terribly long).

Actually not from Texas, live in NJ.
the food looks real good. Hopefully I will have my smoker by fathers day.
