Jerky? James dryer???

I want to make some jerky I've made a lot of jerky and my method with my other smokers was to smoke the meat for a while then finish off in a dehydrator. I've had good results. So my question is, does theb#3 keep box temps of 160 or below?  And of so does the jerky dryer do a good job. Any imfo would be appreciated. Or should i just  do it my old way.

Laura, I've made jerky in the standard units, and the D models...Yes, it will maintain < 160°.  The jerky dryer works great, and is a fantastic way to do jerky and sausage.

I am taking a shot at jerky this weekend, I used a marinade, smoked it and then used the dryer. I am seeing needing to use curing salts? If I vacuum seal and keep in the fridge or freeze some (if it hangs around long enough) will it keep?
