I was also looking for low-salt rubs as we've fought meats coming out too salty in the past. We used this one last night, from UWFSAE. Our local store didn't have dried lemon zest so that part was missing, and we used regular white sugar instead of demerara.
Overall great flavor, minimal salt, and ready to make with what was already in the pantry.
A POULTRY RUB FOR ALL SEASONS
1/2 Cup sweet paprika
1/4 Cup lemon pepper
1/4 Cup demerara sugar
3 Tbsp kosher salt
3 Tbsp garlic powder
2 Tbsp onion powder
1 Tbsp dried oregano
1 Tsp dried mustard
1 Tsp dried thyme
1 Tsp lemon zest
1 Tsp cayenne pepper
1 Tsp cumin
