Sorry for the late reply fellas. I season them with Famous Dave's Roast chicken seasoning. Into the SI2 at 250 for about 1 hr 15 min. Mix together a bottle of wing sauce and honey, heat until blended then toss the wings with the sauce, put in disposable aluminum pan and back in the smoker for another hour. Remove from pan and grill for 2-3 minutes per side to crisp up the skin. Next time I'm going to try a bourbon glaze on them instead of the sauce/honey mixture. I'll post pics and results as always.

Hey Tim. Famous Dave's Country Roast Chicken rub is not hot. It's got salt in it but doesnt taste overly salty. I came across it by accident. It came in a 3 pack with rib rub and a steak/burger seasoning. It's all good stuff
