Ben,
Took your advise & used the last of my smoked salmon to make a mouse. The carrot trick to make the bacon molds worked great & left an al dente bacon roasted carrot that went well with dinner. Very easy, taste & classy.

Those look great, Walt! Did you do the puree with the cream cheese, dill and capers, or just mix them? They look "chunkier," which may be a better option. Just curious...

Walt- wow those look great! I like the idea of not pureeing the ingredients, would seem to have a more textural feel. How were they? I was thinking the same thing about the carrots! How did they taste? Bacon flavor in the carrots? I like your plating but would deduct 1 point for not perfectly straight presentation. LOL j/k. Great job. You beat me to making them.

It was cream cheese, drained capers, fresh dill, purple onion & smoked salmon. I used a stick blender but didnt overwork it. Also, i stuck a chip of the salmon in each. They were really good.

The carrots were dynomite. I peeled them then wrapped. What could be bad about roasted carrots in rendered bacon fat! Put on toothpicks in bite size pieces....a success.
