#3 in the mountains

Well, the #3 made it yesterday but I couldn't get it unboxed until today  :(. Seasoning her up for a long overnight cook tomorrow night. The quality you get for the price you pay is pretty much unheard of these days, but Steve is just rocking it.

 ;D ;D  now that is a problem  :o :o    I ran it for 4 hours last night and this morning when I took the trash out, I grabbed my trusty axe and split a mini split of live oak so she is smoking away as I type........... 8)

Insualted vinyl siding.......the picture is misleading....the smoker is about 1 foot away. I also checked the back of the smoker after the 4 hour 250 degree break-in mark and the back side is as cool as a cucumber  8)

I put my #2 in the middle of the deck when smoking, but I also open the kitchen window a bit to get the beautiful smoky smell in the house.  Admittedly, I do this when my wife is not looking!

Congrats, Scott!  Didn't you have an old #3 (or maybe 2) with the single latch?  What you have there is the setup!  Nice...  Btw, mine all sit no more than 6-8" away from vinyl siding, with no problems at all! 

I see Steve has the new NSF-certification door sticker!  That's a huge deal in the commercial cooking industry, and I'm pretty sure CS and ST have not pursued it yet, making SI the only electric smoker that is NSF certified!

That is quite an accomplishment for Smokin-It 8)   My first #3 had one latch. This new version has the -2- and the longer cord and those handles on the sides are just over the top.
