Looking to do 8 baby backs in 3D. The most I have done is 3 at once.
I see 235 is the temp to set. But looking for a no peek time to shoot for as I will be on a set schedule.
Birthday party for the boy.

Great pic, John!  No matter 3 racks, or 8 (which should take 4 shelves), the timing is the same. Start checking around 4.5-5 hours, and go by feel!  If they pull away from the bone, with a toothpick, you're good!  Should feel jello-y! ;)
