We tried something new tonight. Served it surf and turf style with grilled lamb chops and dinner was quite tasty. Smoked at 225 to an IT of 140. Started with a citrus marinade and used cherry chips with a chip screen for smoke. I let the smoker come up to temp and the chips starting to smoke before adding the pan of shrimp. The temp probes worked great. Cook time was about 30 minutes. I let them rest in the hot smoker for a bit and that was a good thing.
