My 1st Baby Back Smoke in my Model #1

Wel, I just finished my first Baby Back smoke yesterday and I must say that they turned out GREAT! After reading many many suggestions of others on this forum, I decided to keep things fairly simple and do a dry rub using Famous Daves Rib Rub along with a pinch of Kosher salt. I wrapped them in plastic and refrigerated for about fourteen hours. I then let them come to nearly room temp for an hour before putting them in the smoker. I smoked for the first three hours at 225 degrees. I then took them out and double wrapped them in foil that I had added some crumbled dark brown sugar, honey and butter to. Not much of each of those three...just enough to give me a little carmelized look. Anyway, once sealed in foil, I placed them back in the #1 for two more additional hours. End result...they looked GREAT! I put them in a foil pan to transport them to the lake cabin later today to finish them up with a Weber warm up and brushing with BBQ sauce. I'll admit that my wife and I taste tested one and it was by far, the best ribs to come out of our home. I'm a newbie at this, but admit that I am hooked! Oh, wood used was 3oz of Apple.

Hey Ken was wondering how your ribs turned out. They look really good. I put rub on mine then added some cinnamon but did not really taste it.  :o Mine went a little over 5.5 hours this time. But, were fall off the bone tender.

Nice job Ken they look great. I to use butter and honey on my ribs , but I put it on as a binder after before my rub.

Someone expand on this.   

I'm thinking pulled pork on an English muffin tomorrow with that combo.
