Christmas day ribs

I have two racks of babies getting happy in the fridge with some memphis dust.

The plan is to smoker for 5 hours or so at 235.

2oz of either cherry or apple and a water pan.

Rest for an hour and have as an appetizer.

Looking to be done by 130pm est.

Always a favorite, Ed!  I'll be doing some beef ribs - but, they are currently attached to the bottom of an 8 lb prime rib! ;)

I went 5:20.  The bones pulled back. Currently resting in a cooler.
