The #3 analog smokers finally got back in stock and I got mine ordered. Been reading the forum for a couple of months since I decided to upgrade from my MES 30 with mailbox mod.
Up until last year I mainly smoked chicken breasts, pork chops and the like. Found out how to do the mailbox mod to the MES so I could smoke cheese. About the same time I started doing some air drying to make Lonzino (pork loin). I cold smoke the Lonzino 8-12 hr every other day for a total of 36 hours.
Last summer I started making slab bacon and canadian bacon.
So because all my friends want some of my bacon, I needed a bigger smoker, so an #3 is on order.

I know the 3 will do a great job on my hot smoke for bacon and chicken (I don't do much beef).
I'll be very happy if I can figure out how to get the same level and length of cold smoke and as I do with the MES/mailbox.

Do post up your techniques, recipes and smoke procedures along with photos. Everyone likes to learn from the good, the bad and the ugly ... smokes that is.

Hi Dave, welcome to the forum and congratulations on your new #3. I have two of them at different locations and love them. If you do a lot of cold smoking you may want to investigate an external smoke generator like the Big Kahuna from Smoke Daddy. Others do very well with tube type sawdust burners in the unit itself. Poke around on the forum-lots of great information here.

Welcome Dave. MES was a great way to get your feet wet. You certainly made the most of your Masterbuilt with the mailbox mod! I think you'll be impressed with the quality of the SI.

My #3 arrived today after spending 2 days in Bismark ND according to FedEx tracking. On the cart and seasoning has started.
Smoker fits perfectly on the aluminum food service cart I found on Craigslist. Cart puts it at the perfect level for me. Only paid $50 for the cart. Came with side rack mounts (but no trays).

That's a great cart. One of the most functional I've seen. And a great price. Rustic enough that you don't have to worry about "keeping it perfect". You can drag it through the snow without worry. Yet distressed in such a fashionable way.

Did you secure the legs of the #3 on the cart or is it sitting by its own weight?
