Temp controller issue?

2nd smoke on 2.  The temp controller seems hard to adjust.  If i turn temp controller down micro it lowers temp to 200.  If i bump it a micro notch up within short time temp climbing over 250.  Using maverick. Have two butts in 1 hour IT went from 32 to now 108.  Cant seem to get it to stay at 235-240 range?  Any ideas?

So, you are using the Maverick for both the box temp and the meat temp?  I've never seen a 76 degree, 1 hour jump on an internal temp doing butts, even at 250.  I'd say boil some water and do a test on your probes.

Dave's right - that's whacky.  You might want to check your probe location, too.  If it's too close to the shelf (poked in too far), or touching the bone, it will really effect the reading.  Make sure it's "center-mass," and not touching the shelf or bone.
