Title: Cornbread Casserole

My latest fave is the Jiffy cornbread casserole.
1 - 8 oz. box of Jiffy cornbread mix
1 cup sour cream
1 stick melted butter
1 can cream corn
1 can sweet kernel corn, drained
1/4 cup sugar
1 1/2 cup grated cheese, divided
Mix all ingredients minus 1/2 cup of grated cheese and put in a greased pan. Sprinkle top with remaining 1/2 cup of grated cheese. Bake at 350 for an hour.

This also tasted good with some time in the smoker.

Thanks Dave, I make my cornbread from scratch, using buttermilk, white cornmeal, backing powder and soda, some salt, one egg. But, I think can add your sour cream, cream corn, kernel corn, and I assume cheddar cheese. I normally bake mine in a 8 inch pie pan. May have to pull out a larger pan to bake this in. But would be good for a side with the bbq. Mine usually goes with breaded fried pork chops, crumbled and milk gravey added along with cooked spinach.

If you guys can find shoepeg corn for the kernel corn, try it.  I get the Green Giant Shoepeg corn.
