Pork Rib Chops

Reverse seared pork rib chops are great on the grill butt like some help from my smoker.  This time I used 1.7oz of naturally dried cherry.  Season one side with your favorite rub.  A light smoke, no matter the wood it's all that’s needed.  Smoked at 170 for under an hour to an IT of 130.  Let the chops cool a bit.  Then a quick sear on a grill or heavy skillet.  Rib chops work better than loin chops as they have fat like a good steak.
