Holiday Ham

I've been smoking a holiday ham of different types for about 11 years on a Weber Kettle.  This year I used my model 1 for this 10 pound spiral cut, lightly applewood smoked.  It just barely fit but it came out great.  The sauce is my version of an old Weber recipe that's served me well as a glaze and serving sauce.  225 for 4.5 hours to an IT of 135.  3.5oz of apple and cherry chunks.  Attached is my version of the sauce and the original.  My version is larger because everyone wants serving sauce.

Looks great. You might consider cherry next time for your ham. I did it one year and the turkey was hardly touched.
