1st Crack Baby Backs
« on: February 28, 2016, 01:08:10 PM »
Smoke #2 with my new 4D today. I'm doing 2 racks of baby back ribs. I coated with yellow mustard and Traeger Rib Rub last night. I'm using 4 oz of hickory and did put a can of beer in a loaf pan at the bottom of the smoker. I'll post a follow up later today.

What temp are you smoking at?  I'd check at hour 4 for doneness to be safe.

235.  I was thinking of waiting until hour 5. Do you think checking at the 4 hour is better?

What do you guys recommend for saucing my ribs?  At what time and smoker temp?

Can't uncook them Joe.  Start doing toothpick tests between the bones until the toothpick goes in and out like you are sticking warm butter.

When my toothpick has just a little tug left in it, I'll sauce and start checking at 20 - 30 minute intervals.  Use same temp.

Went 4.5hrs and sauced them.  30 min. later the toothpick test went great and they are now on the table under foil.  I love this thing!
