Venison snack sticks

I made venison snack stick today. They taste great but the collagen casing is sliding off! I have made them in the past without any problems. Any ideas what went wrong?

I will not use the light colored collagen casings, they always become loose and slip off. I have had great luck with the mahogany collagen casings and finishing them in an ice water bath.

I smoke to 150 internal then plunge them in a large container of ice water. Leave your probe thermometer in during the plunge. Take them out of the ice water when they get below 100. Lay them on a towel or paper towels for finish drying. the slight internal temp aids in drying by evaporation as you blot the sticks with towels or paper towels.
