Boneless Pork butt vs. w/bone - cooking time??
« on: January 11, 2019, 02:02:06 PM »
I picked up a 13# boneless Pork shoulder at Cosco for my second smoke with my new model 2.  The first with Baby backs came out great. Now on to bigger meat!
When I took the butt out of its packaging it came out in 2 pieces of about the same size.  It's brining now.  Since a smoke time of 13# x 2 hrs @225 = 26 hrs, I am wondering about the meat I chose and the corresponding time it takes to cook

Is there a different smoke time for boneless vs. bone in butt?
Is the cooking time different if the the 13lbs are split into 2 butts rather than 1 piece?

Thanks for your wisdom.

Doing two separate chunks of the same size does not equal twice the time to do only one of the same size chunks... because they both have exposed surface area they are smoking/cooking at the same time.  I always do a pair of ~8 lb butts to 190/195 and they take 11-12 hours.  I do not brine butts, though my experience with brining everything else is that it can make the smoke time much shorter.  I don't know about the boneless vs. bone in as I've only ever done bone in.

Thanks that is helpful.  Cuts the time in 1/2. That would be great.

Stick a probe in each and smoke away to desired finished temperature.  They each could have a mind of their own, don’t be surprised if they finish at different times...

I too was surprised when I bought a cryovac package of boneless butt that weighed 12# and found two pieces in it. I finally decided it was 2 butts not one cut in half.

Larry was spot on.  It took 12 hrs for 1 butt and 13 for the 2nd.  They came out perfect.  Thanks for the help
