Title: Proofing Bread Dough In Smoker?

I have the #3D unit in the garage and wondering, in these Colorado high-plains chilly and windy months, if I could proof bread in it.  The temp range should be good and water in the stainless "flavor saver" for humidity.
My concern is the smoke residue on the inside walls and top dripping or pealing off onto the bread.  :o

Has anyone tried this?

Novel idea!  Maybe place a foil tent over the dough?

You could check your temp at lowest setting to make sure it won't be too hot.  I like to proof at 85-90 (but I'm only a home baker).
