Title: Boneless Chicken Breast for Corn Chowder
Post by: SBORod on December 07, 2021, 07:11:54 PM
I have been making this 'Quick Chicken-Corn Chowder' (https://www.myrecipes.com/recipe/quick-chicken-corn-chowder) for years using four grilled chicken breasts and the family has always loved it. I thought I would try it with smoked chicken and it was a step up!
I used the Basic Poultry Brine from Lazy Q and brined four boneless breasts over night (yes, I know that a few hours are recommended, but I found I get the same results either way and this worked out better for me time-wise).
I used the Famous Dave's Country Roast Chicken Seasoning rub with no binder.
I used 3.2 oz of Smokinlicious Wild Cherry wood and smoked until an IT of 165 degrees (took about 1 hour +).
I bagged it in a ziplock and the next day cut it up for the chowder and yielded delicious results.
Thank you to all the folks who post here, I have learned a lot!
