Title: Cold Smoked Salmon

This was a side of salmon from Costco, cut in half and dry cured for 8hrs. Rinsed and soaked for another 8hrs and then cold smoked using oak for a couple of days (this was after the first 6hrs or so of smoke).

I would definitely cure the fish for longer next time, maybe 12hrs or so.

That's great!  Costco is on-par with Sam's for quality of meat.  Lucky you!

Absolutely! Unfortunately, we don't have Sam's or Restaurant Depot etc. over here.

I have to say though the products from Costco are superb from the meat all the way to their disposable cutlery!
