Hey Scott, Two should be enough. Along with adding a beautiful brown patina to that monster smokers innards the seasoning process also eliminates any residual traces of the manufacturing process, cutting fluids, coolants, etc. If you really want to break that bad boy in right, on its maiden voyage, just toss in a couple of big ol' pork butts then stand back and watch the real seasoning begin.
