Anyone smoked mullet? Got any tips?

My 3D is a little over a week old. I've done some chicken breasts & thighs and swordfish filets. Going to do mullet and ribs this weekend. Wondering about the mullet as to whether I should hang them or rack them. Plan to butterfly them from the top.
 
So you know, ribs and mullet will be separate sessions.

I would treat mullet like any mild fish. Go easy on the smoke. 1.5 - 2 oz max I would think. For me, if I could, I would lay them out on the rack for even heat. I assume they are big enough pieces not to fall through since you are thinking about hanging them.  :o

Unless they are baby mullet you don't have enough room in a #3 to hang them. If you had a #4 I would say go for it, but you are better off butterflied.

Feel the need to bump this thread because Florida smoked mullet is AWESOME, great filets and for dips. I'm on the hunt for some and will report back.
