I did the 2-2-1 method... the #2 did great. I rubbed with a combo of mustard, Famous Dave's Rib Rub and brown sugar. Could've had a bit more kick, but great flavor and bark. I didn't have space in smoker for the maverick to be able to hang to the middle row. that won't happen again, it was just under vent hole. temp on the mav never got above 200 the first 2 hrs, but the light on the #2 told me I was around 225ish... lol. Actually Joe eased my mind... thanks Joe. foiled for two hours and used apple juice and foil pans for ease. the small racks had great pullback and were fall off the bone. the bigger ones were tender and juicy but didn't fall off. good first smoke. only used 1 dowel (2 oz.) and that was plenty for us- maybe a tad too smoky...  nice and tender ribs though - I have seeen tough ribs on BBQ Pitmasters...watchin it now.

Glad it all worked out in the end, Bob.  I think you'll like an unfoiled preparation equally well and it will speed up your cooking time as you won't have the smoker releasing heat and smoke at the 2nd and 4th hour marks.

I will give it a try sometime.  foil stuck to the bottom like glue. felt like I was peeling up a sticker, but it didn't rip. will this get better or worse - anything I can do to keep it from sticking?

After a few smokes it should come out much more smoothly.  I've taken to laying a single sheet of Reynold's HD wide tin foil in the bottom loosely.  The drain grabs the bulk of the grease the foil doesn't really permit much to get beneath it.  As your smoker develops that dark patina inside it will not only give you a more flavorful smoke session but clean up very quickly.

I will try to lay it more loosely... don't want to turn an easy clean-up into a chore.

Congratulations, Bob ... looks like a BIG success!  With the first smoke under the belt, you are ready to begin experimenting with different methods/rubs to find the ones that you and your family like best.

As for the foil, yes...lay it down flat but loose and it will come off without sticking.   I recall that my foil was sticky the first couple of times out, but now it just pulls away when I remove it.
