what went wrong?

On Sunday I smoked four boneless, skinless all natural chicken breasts.  I've done this a handful of times before with nice results each time.  Process has always been brine, season, smoke.  Sunday's meal was no exception, it tasted nice.  But on Monday night I grabbed a leftover one and it was inedible - total rubber - I literally had to spit it out.  I ended up trashing the rest of the leftovers. 

I can't fathom what changed between Sunday and Monday, any ideas?  I guess it could have been a bad piece of chicken (I had a separate one on Sunday and didn't bother checking the remaining two last night, though in retrospect that would have been smart, I was just too disgusted to care at that point.)

Rubbery skin is the norm for me unless I hit the BBQ after smoking but I never had the meat also become rubbery.  I'm guessing the meat was rubbery after you reheated it (microwave?)?   Hmmm
