Gotta love a good tri tip

Smoke up a tri tip yesterday, but went with a different rub from the usual Santa Maria rub I’ve been using. I picked up a rub by Oak Ridge BBQ, Carne Crosta that went really well. Smoked at 225* until 125* then seared on the gasser. Came out wonderful!

Looks great Jeremy... I have tri-tip on my list to do a 7 hour bath with the Anova WiFi. I'm wondering if I could combine with the SI-2 for the added smoke flavor before the bath?

I par smoke prior to braising or dropping in the water bath, regularly. Works great.

Thanks Walt, I have an A-MAZE-N Smoker Tube and I'm thinking that an hour or so in the SI-2 without power would do the trick for a par smoke and then into the bath.

That would work great! I have used the SI for a QVQ pastrami once. Otherwise I use the kettle for that and it works great! Done Chuckies and another pastrami to try something different.

Thanks guys for all the info. I’ll be going to restaurant depot next Friday w/tri tip on my list. Definitely gonna try this QVQ.
