Just pulled it out, put in around 7:45 am just taken out at 9:30pm internal of 195. Had a hard time getting it out in 1 piece, the roast started ripping apart. Hoping it's as good as it look. Wrapped it up and it's going to sit in the fridge overnight, will pull it tomorrow morning. 5oz cherrywood was used for this smoke.

If I hadn't just finished my dinner prior to this coming out, I definitely would have. A small sample and I may have burst.
Pulling it now, it's pretty darn good. The bark pieces are amazing.

The pieces the stick to the rack are snacks for the cook.

He's not kidding about that! Looks good! Pulled pork is definitely one of my favorites in the smoker!
