looking for best temp for pork baby backs i bought at costco and do i smoke meat up or meat down. how long is average

225 for 4.5 to 6 hours. Around 5 hours works for most people. Depends on your preference, meat quality, rib size, etc. Bone side down.

thanxs its been awhile scene i did ribs and i dont like the 3.2.1 method i like to set and forget how will i no their done? will the bone pull out ez?

Also, the meat will have shrunk back about 1/4 inch from the ends of the bone. Going by feel is the best test. Either the toothpick test, or grab a bone and pull on it to see if it comes apart to your liking. Or once you've done a few, you will know by how flexible the whole slab is. At 225, I wouldn't bother testing (or opening the door) until the 4.5 hour mark.

I agree with Kari except I like to go 235F because it renders a much better bark IMHO.

@ 250 for 3.5 hours or a bit longer if they are thick.
