Baby Back Smackdown

After drying out some baby backs on my second day with the S1, I redeemed myself immensely on my second attempt.

Specs:
2 racks baby backs
cut into 4 half rackers
yellow mustard
commercial rub only
225F for 3 hours with NO water pan

Wrapped in Pink Paper
Added the following to half rack each....
1. hot sauce and butter
2. apple juice and brown sugar
3. honey and olive oil
4. apple cider vinegar

wrapped into smoker
WITH beer filled pan
2 hours

Unwrapped
sprayed with cider and apple juice
back unwrapped onto smoker for 1 hour

2 hours freshly wrapped pink paper resting at room temp

30 minutes still wrapped into oven at "keep warm" temp

The ribs were so good that no one used any sauce.

8.5 hour process not counting prep but very worth it

That seems long but when all is said and done, it is the results that count. You have to do what works. And it sounds like you were very successful.  Congratulations!
