Help with dried beef.

I'm making smoked dried beef for the first time. One of the recipe I'm following says it needs to cure for at least 10 days. Has anyone made this and does it really need to cure that long. I'm using eye of the round roast. They are about 2 pounds a piece.

I take it that you are using a brine or wet cure solution? Penetration is about 1/4" a day from all sides. Seeing as how eye of round is pretty thick, I could see a week to 10 days.
