Now that I have a vacuum sealer, I'm looking at smoking larger quantities, and wondering how long vacuum-sealed hot smoked salmon and cold smoked salmon will last in the refrigerator. At what point is it better to just freeze it?

And just to beat the first wise-cracker to it... I know the REAL answer is "Not long because you eat it so fast." ::)

Barry, I don't have the science to back up my practice but just my experiences.  I tend to leave vacuum sealed fish in the frig for a week or 2 max.  If I don't plan on serving it in that time period, I go ahead and freeze it.
