You know what's good about leftovers? LUNCH!!

That brisket I made for my wife, well, I have a lot leftover that will make its way into some food saver bags in a bit. Since I knew I had it waiting in the fridge, I took some of it and wrapped it in foil with some nice BBQ sauce to render down and get all happy. Would it have been good enough to eat already? Yes....it would've but I had a little idea bouncing around in my skull and that was to take some Texas Toast, butter it up and lay that brisket on it and top it with a slice of Colby Jack and a slice of White American cheese and make me a kicked up grilled cheese. It was good eats :)

I just realized that the top pic has a heart on the bread! It either knows that it was made with Valentine's Day brisket or that I love it, lol!
