St. Louis Style Ribs - First attempt
« on: February 13, 2016, 05:06:25 PM »
Used a light coat of mustard as a binder, as I have seen recommend, and a homemade rib rub my brother made. Not exactly sure what's in the rub.

Smoking at 235 and will check them at 5 hrs.

Sounds like you are off to a good start. I go at 250 for spares, but that is just me.............

I find spares usually take 6-6.5 hours....tougher to smoke than baby backs.

I prefer St. Louis Style, and I tend to find my best results at 225 for 7 hours. I've tried the higher temps, but personally like the results that I get at 225 for longer time better. But that's just me.

Tony was right. These went nearly 6 hrs and could have gone at least another 1/2 to really get them tender, but they weren't bad.

Tried posting a photo from my phone, but it's upside down. Will try later from the computer.
