Red Light turns off during cooking?

I am cooking my ribs today at 235 degrees for 5 hours.  I noticed the red power light is off.

Is it normal for the power light to shut off during the cook time? If I move the dial to 250 the light came on again.

It is still warm but when I first started cooking it was hot. I do know the unit has temp fluctuations but the light being off concerns me.

Sean, I believe you are seeing the power to the element light.  When the inside of the box reaches temperature, the power shuts off, just like a home oven.  When the temp drops, it kicks back on again.
