Short Rib Plates

I have the pastor's family coming for dinner tomorrow. His daughter is a huge rib fan but she has only had baby backs. I said I would fix her up.  ;)

Prepped and ready to go with dalmatian rub and some garlic powder. Real simple. Plan on about a 8 hour smoke since they are so big. Planing on a mix of oak and mesquite.

You will really like the plate ribs, I would put a probe in them and get them to 203 or so.

When I have done these, i treat them like a brisket!

The rub/wood will be great on these.

Let us know how they turn out!

They look like nice quality ribs. Greg, do you think 8 hours would be enough leeway? Seems like a good hour rest would be good too.

Hey Kari,

Eight hours should do them, if smoked my last ones at 250 degrees and they turned out great.

The ribs turned out great! The smoke took a little over 9 hours. Great flavor, juicy, and tender. The pastor's daughter loves ribs. I think she had enough!
