Where do I put the meat probe?

I know that this sounds like a silly question but I am planning on smoking salmon on all 4 racks of my #2.  The question is do I put the meat probe in the salmon on the bottom rack since it is closest to the heat source? Or should it go in another location?

I would try to arrange so your larger/thicker pieces of salmon are on the lower racks, and thinner pieces are on the upper racks. Place the probe in the thickest piece, and I think you'll be fine.
