Yet another turkey question

Hi,

This is my first year doing turkeys in my SI3. Previously I did them in the venerable New Braunfels offset smoker. I've purchased 6, 6.5 lb avg. turkey bodies from Kroger. These are turkeys without legs or wings. I cut the backs off and use them to make stock for soups and such. Once trimmed up they'll weigh around 5.5 lb each. I'm going to brine them with DivotMaker's brine for around 10 hours. I figure I can get three on a lower rack and three on upper rack. I'll smoke to 165° monitored by a digital PID with three meat probes.

My question is on the amount of wood to use. With 30+ pounds of turkey should I stick with the suggested 2-2.5 oz. or use more.

I'd appreciate any suggestions or comments.
