Smoked Jalapeno Beef Sausage - From San Antonio Texas
« on: October 30, 2015, 04:14:54 PM »
We are going to a Halloween party at the neighbors and I decided to bring along some smoked sausages I bought in Texas.

I sliced them up and placed in a aluminum pan and then made a sauce.

50 percent Salt Lick Chipotle BBQ Sauce
50 percent (my own BBQ Sauce)
1/4 cup of my sweet heat rub

Poured the sauce over the sausages and placed in the smoker (going for about 2.5 hours) with 2 oz. of Kiawe wood at 225 degrees.

I will plan to stir them after an hour or so, just to make sure the smoke gets into the sauce.
