Brisket - The Final Frontier

Yeah, it's me talking about brisket again, lol.

This was done on one of the kegs. This one picture basically tells the tale. It was good :P

You can do it!  Just learn from my mistakes,  lol. Choose 2 of the 4 methods and it will be fine  ;D

Brine & Inject or Inject & Wrap or Inject & Don't wrap, etc....pick 2

And when doing a smallish flat, don't be afraid to add fat to your injection.  I will even use bacon grease as my rub binder.
