Hmmm....fish sauce. Can't say I ever tried fish flavored steak.
I have and it was pretty nasty in my opinion.  It was an Asian beef recipe with fish sauce and the end result reminded me of grilling something on the BBQ after doing fish without cleaning the grate.  Hopefully, Greg's experiment turns out better.   :P

Dave,

Many of the fish sauces I have tasted are so salty and do smell like dead fish. The sauce I use it a high end product that really compliments other things. Right out of the bottle I would say it almost has a more soy smell to it.

Anyways, the proof is in the pudding as they say, tonight's dinner will decide if I repeat this recipe :)

I just put a light salt and pepper and some oil on both steaks. I plan to start cooking the non-treated steak first, I think the treated steak is going to cook faster due to less water percentage.

Beef - It's What's For Dinner !

Alright six days of waiting to see if this recipe was a keeper, drum roll please.........

The aged steak while maybe not more tender had so much more depth to the taste. My wife didn't know I did this experiment and once I told her she almost didn't want to try it. The end result she agreed the steak was really good and much better than the non aged steak. Next time I will use a couple of my Prime Filet Mignon steaks (I didn't want to waste great meat if this didn't work).

Steak on top was aged.


Added some herb butter, the aged steak is on the bottom of this photo


The steaks in front are the aged beef.


This photo is dinner, the steak show a bit redder than it was, but man was it tasty.

The non aged steak while tender, did not have much flavor. The aged steak was wow, had a real "beef-y" taste, really good.

Comparing this to a Ruth Chris or Mortons, not as good, but the cut of meat was just choice ($7.50 per steak).

Next test I will age a few prime steaks.

Give it a go and let me know what you think.

Interesting.  I will give this a try though redboat fish sauce is too rich for our blood :)  We use the $1-$3 per bottle fish sauces
the SI#4 should be named "The American" because you can do everything in excess with it.  Just because you can.  'Murica!

Let us know how you make out. Next time I plan to use two prime filets. I am going to cook one after three days and then go another two days for the other and see which I like better. I am on the road next week, so the test will happen most likely the following!

I am out again next week traveling, but the following week I want to try a twist on this. I will do a three day, with no drying time in the refrigerator and then do another steak for three days and dry for 1 or 2 days.

Since I am home again for a few weeks I have decided to try the steaks again. I picked up two Ribeyes steaks from the butcher today about 9.5 oz. each. Put 4 t. of fish sauce in a vacuum bag, add the steaks and in the refrigerator they go.

For this test I plan to cook one of the steaks after being in the marinade for 3 days and not allow it to air dry. The other steak, I plan to let air dry, but only for 1 or 2 days.....

I will keep you posted.
