I was watching Diners, Drive-Ins and Dives and the place called the Elk Public House was making sauerkraut. It looked easy enough so I did a search and came up with the recipe below. The only changes using Strongbow instead of Blackthorn (don't have in our area) and the addition of caraway seeds.
I made one version without the caraway seeds and one with them cooked in. The version without cooking the caraway seeds with the sauerkraut was better, but I did add some after it cooled and it tasted fine....
Sauerkraut (Strongbow Gold Apple Hard Cider)
Ingredients
• 1 head of cabbage (sliced then, toss away the core and outside leafs)
• 1 cup Strongbow Gold Apple Hard Cider (Blackthorn will work also)
• ¼ cup malt vinegar
• ¼ cup water
• 2 ¼ t sea salt
• 1.5 t ground black pepper
• 1 t caraway seeds (optional, add after you have finished cooking)
Directions
Combine all ingredients in a sauce, mix well, cover and cook over medium heat for 45 minutes -1 hour or until tender.
*Note make sure that there is always some liquid in the pan or the sauerkraut will burn, add additional water if needed.
