It was time for a brisket

My Wife is a brisket junkie, i've been trying my best to break her of it. Who am I kidding? I'm addicted to them too ;D

I don't cook them as often as I used to, they're too expensive to cook on a regular basis but every once in a while, you get to jonesin' for one and you just have to bite the bullet.

I normally cook my briskets on one of my Big Steel Kegs (Kamado) but this round I cooked it on my lil Traeger pellet pooper. Although it turned out nice, it didn't come out as good as my BSK ones do. All in all, it was still dad gum good!

It was a 13.5 # Black Angus Choice packer. I injected it with Butcher's Prime Injection and my Wife applied her brisket rub and on the Traeger it went. Smoked with Oak at 225° and cooked to 195° IT in about 8 hours which is MUCH faster than they ever cook on my keg! It tasted great but was not nearly as tender as what the keg gives me. It did have a nice smoke ring!
