Look at my new toys!

Got some new stuff from WEBstaurant!  Haven't had a chance to play with them, but will before the weekend is over.  I got:
Victorinox 12" Granton edge w/ Mercer guard
Victorinox 10" chef w/ Mercer guard
Victorinox 8" flexible boning w/ Mercer guard
Mushroom slicer
VACMaster VP215 8)
case of VACMaster bags
3 @ 20x15x5 polypropylene tubs with lids
I got this stuff based on recommendations and/or wishes of others on this forum.  Thanks everyone for the ideas.

Nice work, the granton is great for cutting thin brisket. Boning knife is a must. I suggest a storage container for your goodies.

I thought that was an egg slicer, imagine it would be great for both. However with those sweet knives do you expect problems with mushrooms?

Excellent purchase. I have a similar mushroom slicer. Works great on mushrooms, eggs, strawberries and anything else of that size. Much faster than a knife.

Price was right for the slicer, so I got it to try.  I get a 5-7 lb case of whole whites or portabellos for $5 every month ,so I wanted a quicker way to slice them up.

All nice choices - you'll enjoy that granton slicer, but my eye immediately went to the new chamber sealer!  Wow!  Let me know how that bad boy performs...it's on my perpetual wish list! ;)

The VP215 is great.  It's quick and does a great job.  It is freaking heavy though.  90+ lbs so you better have a place in mind to leave it and use it.  Luckily I have one little corner on a counter I can slide it back when not needed and pull forward to use.

If I have to upgrade the VP215, I think my wife would send me off with it.  We packaged up about 20 lbs of ham with it last night.  Worked great.  They were just store bought hams ($1.49 a pound).  Had my wife weigh and bag, my daughter worked the slicer (10" globe found on Craigslist for $125), and I worked the VP.  Took less than 20 minutes.

I was set to buy a Weston at Christmas time but bought the SI instead.  My old sealer hasn't died yet so I think I made the right choice.  I've read good things about the VP's so they will stay on my short list.

Yeah Dave, I was looking at the Weston first, but everyone kept saying they wanted to get the chamber style.  I figured I'd bite the bullet once and should be good for a very long time to come.  The bags seem to be fairly inexpensive also.  I bought a box of 1000 10"x15" bags for about $90, and that wasn't even a sale price.
