Second smoke on the si #2

The ribs came out so good I opened the freezer and took out a half chicken and 4 quarters.  I used the same rub I had on the ribs and let them sit in the ice box overnight.  Put them on at 8 am put in the probe in the chicken breast and let her go.  It is a remote so I just watched the temp climb.  1 and 1/4 hour and it was 131  after an 2 3/4 hours it was 171  great.  Went out and used my trusted hand thermometer and checked they looked great they showed 168 in the breast and all the quarters.   Let them sit about 15 minutes and they are good.   The SI is fool proof Just let it do its thing and enjoy.

I am finding out the success is in the smoker.  The only way you can make a mistake is by not putting meat in it i think.  Love this smoker.  Had some family and friends over and the ribs and chicken are gone.  I got 5 star reviews on everything.
