I have the #1 smoker and want to smoke an 11.5 pound turkey. I have a brine recipe I am just wondering how long to smoke how much applewwood to use and what temp to use

I did a 12# turkey in my #2 for Thanksgiving.   I used 3oz of hickory and it took almost exactly 4 hours to reach 165IT in the breast.   I set the smoker for 225F, but you could go higher and lower the time for the smoke.

Don't worry about time, worry about getting to 165ยบ in the internal breast meat temp.  Smoke your bird at 250 - should take under 4 hours.  Go off on internal temp, not time!
