JD...go ahead with your ribs!   You don't need to monitor IT for ribs, just allow about 5.5 hours and you should be fine.   When you get to poultry, BBs, pork loins, etc, then you will want the Maverick in place to monitor the IT of the meat.

So I emailed FireCraft and they responded SUPER quick. Here's what they said:

I really want to see some reviews on this thing. I'm curious about the distance it goes with bluetooth and the waterproof probes. I also like Martin's idea with the webcam for when I'm away so I'm going to use that method for long smokes and I'm away from the house.

Most bluetooth devices are usually limited to about 30 feet unless there is some kind of amplifier. I will be interested also to see what they do. Masterbuilt has a wireless remote in their newer smokers and my experience with them is in the 30 foot range, but it also depends on obstacles like walls that can lower the distance.

I just emailed FireCraft yesterday about this and they said that they are hoping to get their supply in next week. The customer service guy was really quick to email back.

I am not going to get one of these full sets, but I do want to order a couple of the new style probes as one of mine is dead.
