I will look to the black and white wires on the top of the smoker near the temperature controller.

I think the addition of a James Jerky Dryer turned on at the point where you kick up the heat would help get rid of the extra moisture and add in the crisping of the skin.

And no water pan for poultry.  It has a moisture-barrier skin, so adding moisture only keeps the skin softer!  If you want dry skin, don't add additional moisture.
