Tenderquick brisket
« on: March 09, 2014, 08:41:52 PM »
Just cooked my first brisket with my #2 used 5 oz of hickory and a local rub from a BBQ store. Also used three tablespoons of tender quick let it sit before cooking for 15 minutes and then washed it before rubbing here's the result. Very juicy very tender love my new smoker.

Looks good.

How did you get the smoke ring?

Wow!  The Tender Quick gave you a helluva nice "faux" smoke ring!  Looks great!  Might go a little easier on it next time - 3 Tbsp. is a  LOT!

Smoke ring is from the tender quick. Divot, it calls for a table spoon a pound I thought I did go light. What do you recommend? Three tablespoons isn't a dangerous amount is it?

I'll have to do some research on the Tender Quick amount.  I know that would be way too much of cure #1 salt, which I mainly use in brines.  If I'm not mistaken, TQ is less nitrite/nitrate content than #1 curing salt.  I deal in grams in my brines, not tablespoons!  Just struck me as a LOT when I read it!  I will get back to you if I find something of concern.
